The Offcut Food Truck

This year again, The Alpina Gstaad is setting-up its food truck on Gstaad’ snowy slopes. Always looking for creative ways to address food waste, our Executive Chef Martin Göschel will export his zero-waste philosophy on the slopes with a brand-new selection of delicious dishes made with common surplus ingredients «offcuts» from The Alpina Kitchen. In collaboration with Skiwelt Gstaad, you’ll find the converted snow groomer, located just in front of the Vorderes Eggli ski lifts.

Using the leftover rye bread from The Alpina Gstaad, a soft empanadas dough is created, filled with beef or curry vegetables. The famous zero-waste casarecce, made with the same process, are being used for a pasta alla crudaiola. On the sweet side, let yourself be tempted by a banana cake made with ripe bananas from our breakfast, or the savory muffin made with unused berries from our pastry kitchen. These gourmet treats are served on the spot or as take-away.
